Tarte mousseuse aux prunes


Pour la pâte:
75 gr. de farine de riz complet
75 gr. de farine à gâteaux
1/2 càc de cannelle en poudre
1 pincée de sel
1 càs de sucre de cannes
2 càs d'huile de noix
1 càs d'huile d'olive
8cl d'eau chaude
un demi œuf

Pour l'appareil:
35 cl de lait
de l'essence de vanille ou 1/2 gousse fendue
50 gr. de farine
60 gr. de sucre de cannes
3 œufs
500 gr. de prunes quetsches ou reines Claudes

Mélanger les ingrédients de la pâte ,excepté l'œuf, et laisser reposer une demie heure minimum.

Séparer les blancs des jaunes et réserver les blancs au réfrigérateur avec une pincée de sel;
Faire bouillir le lait avec la vanille;
Battre au fouet les jaunes , le sucre et la farine avec un peu de lait jusqu'à ce que le mélange soit homogène;
Délayer le mélange avec le lait à la vanille et remettre à feu doux jusqu'à épaississement;
Battre les blancs en neige et les incorporer délicatement à la préparation.

Etaler la pâte , la piquer puis cuire 10 mn à 180 degrés, la badigeonner ensuite d'une œuf battu et la refaire cuire 5 mn ,ainsi elle sera imperméable aux jus des prunes;
Verser la préparation sur la pâte ,dénoyauter les prunes , les couper en deux puis les poser dessus ( côté plat en haut).
Mettre au four 60 mn à 180 degrés.

Cette recette est directement inspirée du chef Charles Barrier à Tours, je l'ai juste allégée.
PS: mon four est faible aussi adapter le temps de cuisson au votre;
le meilleur c'est avec les reines Claudes que je ne trouve pas facilement à Tokyo!

The english corner:
for the tart base:
75 gr of plain rice flour "light beige" ( there is another one more brown)
75 gr of white cake flour
half coffee spoon of cinnamon
one pinch of salt
1 soup spoon of Cann sugar
2 soup spoons of nut oil
1 soup spoon of olive oil
80 cc of hot water
half egg

for the inside:
500 gr of prunes questches or reines claude
50 gr of regular cake flour
350 cc of milk
3 eggs
60 gr of cann sugar
1/2 vanilla gousse

Prepare the tart base with all the ingredients except the hqlf egg and mix them to form a bowl that your reserve in the fridge for a minimum of half and hour.
Put the milk to boil with the half gousse vanilla sliced in two (but attached at the top) , to let go the powder inside the milk.
Once boiled reserve to make it less hot;
Put the sugar , the flour and the yellow of the eggs together and mix them until it becomes a smooth paste, you can put a spoon of milk if it is too hard,
then add the vanilla milk little by little with the eggs;
then put it back on the medium fire and mix continuesly until it gets stiffer and pour it in a big bowl to stop the heating.
Mix the white of the eggs with a pinch of salt and incorporate spoon by spoon into the eggs.

Take the tart base you made and put it in a "tart moule"; put an aluminium sheet and stones on it , then cook it for 10 mns at 200 degres; take off the stone and take an egg, mix it and with a brush "paint "the all tart; then cook again 10 mns at 200 degres.

Put the custard mousse in the tart then the prunes cut in 2 ; the round face on the top of the custard and put in the oven at 180 degres for an hour ( be careful each oven is diferent, check after 45 mn)

The best is with the reine claude ( the green ones)
This receipie is directly inspired from the one created by the chef Michel Barrier in Tours, France, I just light it up .
